Pizzaiolo began with a simple vision: to bring truly authentic Italian pizza to Canada. Founded in 2010 by the Romano family, our journey started when Marco Romano, a third-generation pizzaiolo from Naples, moved to Canada with dreams of sharing his family's culinary heritage.

The first Pizzaiolo location opened in a small storefront in Toronto with just one wood-fired oven imported directly from Italy. We quickly gained a reputation for our uncompromising approach to traditional Neapolitan pizza, using only the finest ingredients and time-honored techniques passed down through generations.

Today, Pizzaiolo has grown to multiple locations across Canada, but our commitment to authenticity remains unchanged. Every pizza is still crafted by hand, cooked in wood-fired ovens, and made with the same passion that inspired Marco to share his family's tradition with a new country.

Our Pizza-Making Process

The Perfect Dough

Our dough begins with just four ingredients: "00" flour, water, salt, and a small amount of yeast. We mix these by hand and allow for a slow 24-72 hour fermentation process, developing complex flavors and the perfect texture.

Fresh Ingredients

We source San Marzano tomatoes, fresh mozzarella made daily, and locally grown produce. Our commitment to quality means we work directly with farmers and producers who share our passion for exceptional ingredients.

Hand-Crafted

Each pizza is shaped by hand—never using a rolling pin, which would crush the delicate air pockets in the dough. Our pizzaiolos train for months to perfect this technique, ensuring consistent quality.

Wood-Fired Oven

Our imported wood-fired ovens reach temperatures of 485°C (905°F), cooking each pizza in just 90 seconds. This intense heat creates the characteristic leopard-spotted char and preserves the moisture in the toppings.
